A harvest takes time and care. Preparing the pericarp deserves that same attention. We first freeze the rind, then use a carefully controlled vacuum process to remove moisture. During primary drying, ice passes directly into water vapor through sublimation. Further drying reduces the remaining moisture before the pericarp is milled.2
This process limits prolonged exposure to the higher temperatures used in many conventional drying methods. Freeze-drying requires specialized equipment, time, energy, and careful control. Those requirements are part of the work behind our preparation.2
